Thy Mitchell
Owner
Thy Mitchell is the co-owner of Traveler’s Table and a Board Member of the Texas Restaurant Association – Houston Chapter. She grew up in Houston as a first-generation Vietnamese-American in a family centered around food. As a child, she spent weekends working at her grandmother’s and mother’s small, traditional Vietnamese restaurant, where she developed a deep appreciation for authentic flavors, hard work, and genuine hospitality.
Throughout her time at the University of Houston, she continued working in the restaurant industry. After graduation, Thy began her career as a human resources and operations manager while earning her master’s degree in Human Resources and Employment Relations from Penn State University. She has held HR leadership roles at three Fortune 500 companies in the hospitality and retail industries.
Her love of travel and food is what brought her and her husband, Matthew, together. That shared passion ultimately led to the creation of Traveler’s Table and Traveler’s Cart, built around their philosophy of exploring the world through food and drink, a mission that remains deeply personal to Thy.
